Homemade Potato Salad is a family favorite that is great for a picnic, bbq, or potluck! Mom's Potato Salad Recipe with Eggs.
On my side of the family, potato salad is a staple at every extended family meal. And of course, we always ask my mom to make it. Her salad recipe is so good!
It is actually a very simple recipe and maybe that is what makes it so fantastic. Although my mom would say it is all of the love that she puts into it. Either way, this salad never disappoints.
Ingredients You'll Need For This Recipe:

- 4 Potatoes
- 4 Hard-Boiled Eggs
- ½ medium chopped Onion
- 2 tablespoon Vinegar
- ½ cup Mayonnaise
- ½ cup Miracle Whip
- 1 tablespoon Mustard
- ½ teaspoon Salt
- ½ teaspoon Pepper
How to Make Best Potato Salad:
Let's start with the potatoes. Use a vegetable peeler and remove the skin.
Then comes the dicing. I used to dread dicing until I learned a fast and easy way to do it.
How to Quickly Cube a Potato:
1-3) Hold the potato at the base and cut slices without cutting the base. This potato took 3 slices but it depends on the size of the potato and how big you want the chunks to be.
4-5) Turn the potato ¼ turn and slice again without cutting the base. This potato took 2 slices on its side.
6) Your perfect cubes will fall away.
7) Then you only have to worry about cubing the ends into a couple of pieces
8) and cube.
I can cube a potato much faster using this method.
Boiling Potatoes and Eggs:
When all the potatoes are cubed put them in a saucepan and cover with water. Boil until the potatoes are easily pierced with a fork.
While the potatoes are boiling, start boiling eggs.
Put the eggs in the bottom of an empty saucepan and then cover with water. Set the heat to medium-high. When the water starts to boil set the timer for 10 minutes and let the eggs continue to boil. When the 10 minutes is up put the pan in the sink and run cold water into the pan to help cool the eggs.
Combine Ingredients:
Peel the eggs and slice them using an egg slicer.
Add the sliced eggs to a large bowl.
When potatoes are done cooking, strain the water and add potatoes to the bowl with the eggs.
Chop half of a medium onion (you can use the same method I used above on the potato) and add to the bowl.
My mom says the secret to her salad is she uses ½ mayonnaise and ½ Miracle Whip. I used the measurement of ½ cup of each, but it really is a personal preference and how big the potatoes are. Feel free to use more or less.
Add Mayonnaise, Miracle Whip, Vinegar, Mustard, Salt, and Pepper to the bowl. Stir to combine.
You can serve immediately but the potatoes will still be warm from boiling.
I recommend making the salad several hours prior to eating so it can cool in the fridge before serving.

Our Baking Essential List:
- For baking casseroles, we use Glass Baking Dishes. I especially like the dishes with lids so leftovers can be transferred straight to the fridge.
- Silicone Kitchenware is my favorite because they don't scratch my cookware and is easy to clean!
- A Glass Cutting Board is a must to prepare all of those ingredients. We even keep ours on our counter at all times.
- This Knife Set will also become your favorite! They cut beautifully, and with the hollow design of the knife, food doesn't stick to the blade.

I really love how you give step by step directions (including photos of dicing the potato!) to teach people how easy it is to make something that so many people probably just buy at the groceryready made. That’s exactly what I’m looking for in my Link Party that just opened a few minutes ago. This week on Future Expat’s Required Ingredient Link Party, we are featuring potato recipes. I hope you’ll come link up this one and any others you think others will like!

I would have to say Miracle Whip is my favorite.

I didn't think to use miracle whip, but when it said salad dressing, I went for it and used Hidden Valley Ranch. And it was DELICIOUS! Thank you so much for sharing your recipe! 🙂
